How to set out what to keep, where to store it, and what needs regular attention. Chapter 09
Keeping food dry
“How do I stop dry food from becoming damp and useless?”
How to protect dry stores from moisture and check the place where they are kept. Chapter 02
“What food can wait until I add water?”
How to keep foods that are meant to be brought back with water when needed. Chapter 03
Using cold storage
“Where is the coldest useful place in my house?”
How to find and use a cold corner for food that benefits from cooler storage. Chapter 04
“How should I use my freezer as part of my pantry?”
How to treat the freezer as winter storage and prepare food for it with care. Chapter 06
“Does a fuller freezer make a difference?”
How to arrange a freezer so the cold is held more steadily around what you store. Chapter 07
Preparing for no power
“What water should belong with my food store?”

Not in this book: A secret trick for making unsafe water safe.
I describe the plain work of boiling water and keeping it in the pantry.
Not in this book: A pantry that can be filled once and forgotten.
I show you how to keep the store turning over.

05 · Who wrote it
Batbayar Ganbold is a 76-year-old herder from Khentii province in eastern Mongolia, where winter temperatures routinely reach 40 degrees below zero.
He has spent his whole life moving with the seasons: keeping a ger warm through the steppe winter, and keeping a family fed for months without a refrigerator or electricity, the way herders always have, by drying, freezing and storing food with care and wasting nothing.
He shares those ways plainly for households far from the steppe, always with an honest word about what works differently in a house that stays in one place.
